Cheesy Cauliflower Rice

I made this for dinner the other night. It’s so simple to make and you can add whatever cheeses you want in it, trust me! No problem at all with whatever you like. I used mostly white cheeses and a tad of sharp cheddar in this. Turned out great! Kinda tasted like a mac and cheese really. So easy! Now my measurements are not precicse, so you can tweak this how you like, ok? Let’s go!

Ingredients:

1 cup cauliflower rice (I buy the frozen already riced)

Extra Virgin Olive Oil (about a teaspoon or two)

Butter (about a tablespoon)

Salt

Pepper

1/2 and 1/2 cream (dash or so)

Parmesan cheese (you decide the amount)

New York Style White Cheddar grated

Sharp Cheddar (grated)

 

Instructions:

 

In a sauce pan put in EVOO and butter with the frozen cauliflower. If you are using fresh, let the pan heat and the EVOO and butter melt some first before adding cauliflower.

Add salt and pepper and allow this to cook a while until heated through and if frozen, the cauliflower is tender, not tough.

Mix in your cheeses until you see a consistency form, then add in the cream slowly (1/2 and 1/2 or heavy cream is ok) and continue to stir adding cheese and cream as you need to.

When you get that “mac and cheese” consistency you are good to go. Season if needed again and enjoy! šŸ™‚

 

I did NOT get to do the carbs on this but the basic carb rundown is about 3 carbs, maybe 4 depending on your cheeses and cream added. Excellent side to baked chops!
