So, my daughter wanted to make cake. She was deciding on vanilla or carrot. We said carrot. Let’s see if we can pull out a low carb one. SHE DID! Oh my God this is amazing. You have to make this. So, get ready, run to your store and pick up the ingredients!!! Check it out, don’t you want some? You do, so you’ll have to make your own, sorry, I sort of claimed this one. 😀
Ok, so wipe away the drool and lets get to the recipe, shall we? We shall.
**First let me say that she used the Sugar Free Vanilla frosting that you can buy at the grocery store, okay. The carbs in that are about 2 carbs for a serving. When you spread a THIN layer as she did on the cake, it might add <1 to 1 carb per serving of this cake. So, with frosting you would get about 3 net carbs per slice on average. 😀
1 stick unsalted margarine or butter (melted)
2 Cups Splenda (or sweetener you prefer)
3/4 cup vegetable oil
2 tsp vanilla
1 cup almond flour
1 cup Carbquik baking mix (buy on Amazon or Netrition. If you do not have this, use another cup of almond flour).
1.5 tsp baking powder
1.5 tsp baking soda
2.5 tsp cinnamon
1 cup shredded carrots
1/2 cup chopped pecans
1 container SF Vanilla Frosting (buy at Walmart) but you will NOT use the whole thing!
Preheat oven to 350
Beat eggs, melted butter, oil, vanilla and sweetener together until blended.
Mix flour, baking soda, baking powder, salt, cinnamon, nutmeg together.
Add dry mix to wet mix and mix well using a hand mixer.
Fold in shredded carrots and pecans.
Spray or grease a square baking pan and fill it with the batter. 🙂
Bake 30-40 minutes, checking at the 30 minute mark, until a toothpick inserted comes out clean.
Allow to cool at least ONE HOUR before you frost.
Frost the cake with a thin layer of the frosting. If you prefer to make your own you can do so with 1/2 cup butter, 8 ounces cream cheese, 4 cups sweetener, 1 teaspoon of vanilla. We didn’t have enough ingredients for that. LOL.
The nutrition is as follows per serving (makes 16 servings)
2 NET carbs (for cake without frosting, with frosting add 1 carb).
26 g Fat
6 g protein
1 g sugar
