Turkey Veg Soup

So, love soup? I do! This is SO easy and would make 4 small bowls or two large. There is about 12 carbs a serving for two servings. Yum! 


1.25 lbs lean ground turkey 

2 tbsp evoo

Salt to taste

Pepper to taste

1/2 tsp dried rosemary 

1 tbsp parsley

1 can mixed vegetables, drained

1 cup tomato juice, can add water if needed also. 
Brown turkey in evoo, salt, pepper, Rosemary and 1/2 the parsley.

Drain. Add vegetables and juice. Taste. Season with remaining parsley and salt, pepper as needed. 

Heat through and serve. Enjoy!!!
