My daughter and I love cheesecake. There is just no two ways about it! Being low carb, the cheesecake part is easy, and this BASIC recipe with a pecan crust is AMAZING all on its own, but top it with some lightly sweetened mixed berries and ohh wow! You have a recipe for success. The basic no bake cheesecake recipe can be done in SO many ways. We are working on a chocolate one next using unsweet cocoa powder for our next twist. Anyway, onto the recipe! Enjoy!!
1 cup pecan meal (you may make your own by grinding pecans in the food processor just enough to get a “meal” consistency, but careful to not blend too long and get pecan butter, which would be tasty, just not a nice crust).
1/4 cup Splenda
1/2 sick unsalted butter or margarine, melted.
~~ Mix meal and Splenda well. Add butter and mix until you get a dough like ball.
~~Place the crust mix into a 9-inch pie pan and press into the bottom only. Sides not required, however, if you would like to increase the recipe and do sides, go ahead, just adjust your counts.
Now for the filling:
2 Packages cream cheese, room temp (they need to be SOFT!!!)
1/2 cup Splenda
8 ounces sour cream (light works here but is NOT as flavorful and will not set up as fast…go for the full sour cream).
4 oz whipped cream. You may whip your own if you have time, OR I buy Land O Lakes Sugar Free in the aerosol can, Publix sells this, and it’s 0 carbs, no sugars. Great stuff.
~~Mix the cream cheese and Splenda with a hand mixer or in a stand mixer.
~~Add in the sour cream and mix with the mixer to fuly incorporate. You want a smooth texture, if you have lumps your cream cheese was not room temp enough!
~~ Fold in the whipped cream and then stir until you get it all fully incorporated.
~~Pour on top of your pecan crust. Spread evenly. Place into the fridge for at least 6 hours, prefer 24, before cutting. A cutting tip, wet the knife you are using between cuts, helps it not to stick as bad! 🙂
Makes about 8 slices
Fat: 41.1 (from cream cheese and pecan meal…healthy fat!)
Mix up 2 cups WHOLE berries. I used strawberries, raspberries and blackberries. DO NOT CUT UP UNTIL AFTER YOU measure!
Slice the berries and place into a bowl.
Add a tablespoon of Splenda and mix.
Place into the fridge until ready to serve.
This adds about 2 g of carbs.

~~These lc no bake cheesecakes are excellent to make any time of year. There is a pumpkin one on my site you will love for the holidays.
