So, it’s been a while since I posted. Life is ever busy as a single mom, college student, self-employed contractor and a teacher to my now home schooled daughter! I stay busy! But, this was a fast and easy dinner I made last night. Just a plain thing really but it’s super easy and very tasty!Also, low carb! Check it out. 🙂
This is for TWO wraps. 🙂
2 large leaves of lettuce. You can buy these already done at the grocery by the way, Kroger has them. These were iceburg but I have also seen Romaine.
1 tablespoon Duke’s mayo (divided)
4-5 ounces smoked turkey breast (deli is fine, just verify the carbs. This had about 1 carb for 2-3 ounces).
Shredded mild cheddar cheese
3 cherry tomatoes, split.
4 slices bacon, cooked.
Basically, you assemble! Let the lettuce serve as you would a tortilla for a regular wrap and add in your mayo, turkey, bacon, cheese, tomatoes. 🙂 This can be changed SO many ways, you can use a variety of other ingredients. I next am going to try doing taco lettuce wraps. 🙂
