No Nanner, Nanner Nut Muffins 

  So, we love banana nut bread and I’ve made those too but thought why not a muffin? Sure! 

This is easy but let me share something with those of you who are not using Carbquik, and I will make a blog post about this when I can, you can sub that for 1/2 parts almond flour and coconut flour. You will need about a teaspoon of baking powder or soda though to help rise, and you may need more liquid as well. Just a tip! 🙂

Now, to the muffins! 
1.25 cups Carbquik

1 tsp banana extract

1 tsp vanilla extract

1/2 cup walnuts

1 tsp cinnamon

dash nutmeg

1/2 + cups almond or coconut milk (I use CalifiaFarms Almond Coconut blend 0 net carbs)

1/2 cup sweetener of choice
Preheat oven to 375

Prepare muffin tin

Mix dry ingredients. 

Add extracts and milk a bit at a time while mixing. 

Add milk until you get  a good dough. 

Fold in walnuts. 

Fill muffin tins and bake about 15 minutes. 
This makes 6 muffins with the following nutrition info

Fat 10.2

Carbs 3

Protein 5.3
