Lemon Chia Seed Muffins (Super low carb, super healthy!!)

These are yummy and lemony and ohh so tasty! With chia seeds that are super healthy for you, what is not to like? 

  
Preheat oven to 375. These will cook about 20 minutes to get good and cooked in the middle. 

Prepare muffin tin. Makes 5 muffins. Yes, I miscalculated, haha, so you can add to this recipe to make more. At first attempt I don’t make a lot in case it’s a flop. Not one to waste costly ingredients!!

Ingredients:

1 cup Carbquik

1 tsp lemon extract

6-8 squirts lemon juice or the juice of two small lemons

1 tbsp chia seeds

1/2 cup sweetener of choice

1/2 + cup almond or coconut milk. I use Califia Farms almond coconut blend, 0 net carbs. 
Directions:

Mix dry ingredients but not chia seeds. 

Add wet and milk to get a good dough. 

Fold in chia seeds. 

Place in muffin tin and bake 20 minutes or until done.
