Low Carb Carrot Cake Muffins

Got your attention? Good. 


1 cup Carbquik 

2 tbsp cinnamon 

Dash or two nutmeg 

1/2 cup Splenda

Dash salt

1 egg

Tbsp vanilla 

Almond milk (as needed)

Handful shredded carrots 

Palmful chopped walnuts 


1/2 block cream cheese, room temp

1 tsp cinnamon 

2 squirts liquid sweetener 

Mix dry ingredients. 

Add egg, vanilla and begin mixing with a mixer. Add milk until you get a good batter. 

Fold in carrots and nuts. 

Bake at 350 for 15-17 minutes

Meanwhile mix frosting ingredients together and set aside. 

When done, move to cooling rack. Makes 6 muffins.
