So, I Had an epiphany of sorts. HA! I wondered what would be a good dish to create with chicken and mozzarella cheese. Hmm. A friend suggested to serve with pasta. Ok.
This has great flavor, juicy, lovely chicken. The pasta is creamy and cheesy. YUM!
6 Chicken Cutlets
4 slices tomato (fairly thin)
6 slices FRESH mozzarella cheese
Salt and Pepper (this will be needed throughout the dish for flavor)
2 cups CarbaNada egg fettuccine noodles, cooked.
2-3 TBSP butter
2-3 oz 1/2 and 1/2 or HWC (heavy whipping cream)
3-4 TBSP or more Parmesan cheese
Preheat oven to 375.
Prepare your dish you wish to cook in as you normally would.
Dry chicken cutlets off with paper towels to remove moisture.
Place chicken into the pan.
In a small bowl put a bit of olive oil (EVOO- extra virgin) and with a brush coat the chicken.
Season with salt, pepper, and rosemary. If using dried you can grind it up in the palm of your hand and sprinkle it over…no problem. For fresh, you can chop it up if you want, up to you.
Cook these in the oven until done and a tiny bit brown on top.
- you may have a good bit of juices in the pan, drain this out before you top with tomato and cheese.
In the meanwhile as the chicken cooks, boil water for the pasta.
Place butter and cream into a sauce pan. Allow this to heat through and the butter to melt. Add a bit of salt and pepper.
Back to chicken:
When the chicken is done top with tomato and sprinkle a dab of salt and pepper over the tomatoes. Place it back in the oven another 10-12 minutes.
Add Parmesan cheese and allow to thicken. You may find you need to add more liquid to this as you go, beware if you add more and more HWC you will get a thicker sauce, you can sub this by adding coconut milk which will not thicken as much. Just a tip and it gives AMAZING flavors.
Top chicken with mozzarella and place back in the oven just long enough to melt.
While the chicken is finishing, drain cooked pasta and combine that with your sauce, again thinning out with coconut milk if needed.
Time to plate! Place the noodles on the bottom and top with your chicken breast. I added a bit of salt, pepper and parsley over the top of mine for added flavor and seasoning.
Serving size: Pasta (CarbaNada – low carb noodles – buy on Netrition) with 2 chicken breasts (I had one large one).
