Apple Cinnamon Bagels

Everyone loves a lil something different from time to time, right? I sure do. Bacon is truly a staple in my house for breakfast but nothing quite beats a bagel. I love bagels. I decided to try an apple cinnamon bagel, but keep it low in sugars, low in carbs. This worked! They are moist, tender, lightly sweet and very tasty. Try to not eat the whole pan! 

  

Ingredients:

1/3 cup coconut flour

1 1/2 TBSP flax meal

1/2 tsp baking soda

2 tsp cinnamon

dash salt

3 eggs, beaten

1/3 cup unsweet coconut milk (I used Califia Farms Almond Coconut Blend)

2 1/2 TBSP unsalted butter, melted (may use  marjarine or whatever you prefer to lessen fat, etc)

1 tsp apple cider vinegar

3 TBSP liquid sweetener of choice

1 tsp vanilla extract

1 SMALL Gala apple, diced small
DIRECTIONS:

Preheat oven to 350 degrees

Mix DRY ingredients in a bowl. Set aside. 

Mix WET ingredients (not apples) in another bowl. 

Chop apple into small dices. 

Mix wet ingredients into the dry and combine well with a large spoon. No mixer needed for this recipe!!

Fold in apples. 

Place into a GREASED donut pan 
 and even out into 6 bagels. 

Bake 17-20 minutes, checking for doneness with a toothpick after 17 minutes.
