Miracle Cheesy Rice and Broccoli

Probably one of my daughter’s favorite sides is cheesy broccoli and rice. That is the ONLY way my child will eat broccoli believe it or not. So, we used to get the packaged Lipton stuff which is FULL of carbs. Not anymore! We tried doing this with cauliflower rice and she didn’t like it, neither did I. The flavor was off and it just did not come out as we wanted. So, we bought Miracle Rice. These are Japanese “noodles” that are riced. You can purchase them on http://www.amazon.com also. This is the package:

We used a whole bag, 8oz of this with some broccoli cut very fine, and some cheese sauce. It turned out to be one of the best sides we’ve done lately and it was so much like the real thing. My kid had two servings! LOL.

1 Package 8 oz Miracle Rice

1/4 cup finely chopped steamed broccoli tops

1/2 packet of Velveeta cheese sauce

1/8 cup shredded cheddar cheese

1-2 tablespoons butter

Salt to taste

Pepper to taste

Drain the rice and rinse well. Allow to sit for a good while to drain as much as possible.

Heat a pan on medium to high heat and add rice. Allow to cook, stirring occasionally, until you start to see no liquid at the bottom of the pan and add salt and pepper.

Add butter.

Steam some broccoli and chop up the florets very finely.

Add into the pan.

Mix well and add in the cheese sauce, and cheese. Season as needed and serve.

This makes 3 servings at about 82 calories and 3 carbs a serving. You can make this even less by omitting the Velveeta cheese (was all I had) and using all cheddar or a mix of shredded cheeses. Enjoy!!
