Squash Augratin

So, I was looking for a side dish and I really wanted some cheesy potatoes. Duh! LOL But, I cannot have that and did not give in to the urge…instead I bought some squash and came up with this….

Ingredients:

1 small-medium zucchini, sliced thin

1-2 small yellow squash, sliced thin

2 tbsp extra virgin olive oil

2 tbsp butter

2 tbsp or less hwc (heavy whipping cream) or half and half

3-4 tsp grated Parmesan

3/4 cup to 1 cup shredded sharp cheddar

Salt to taste

Pepper to taste

First, slice zucchini. I found using a processor worked for this well. Then, place in a pan with evoo and butter, salt and pepper. Allow to cook until it begins to soften. (**optional, you may add onion in also to give more flavor, my child won’t eat onions, so I did not add that).

When the squash are softened, remove and drain. Place into a pan and add 1/2 the Parmesan, and cream stir.

Top with the rest of the Parmesan and the cheddar.

Bake at 375 for about 15-20 minutes or until your top is melted and golden brown. Serve with chicken, pork, etc.
