This is one of my kids fav things. Easy to make. Flavorful. Makes about 8 servings with roughly 8-9 net carbs a serving.
2lbs chicken breasts, boiled, shredded
1 can peas and carrots, drained
1 can low sodium cream of chicken ( or make your own)
1 can low sodium cream of mushroom (or make your own)
Chicken stock as needed
Shred cooked chicken, add veggies and cream soups as well as stock. Add black pepper. Heat through.
I mixed mine with cauli rice for a meal around 10 carbs
