Cauliflower Rice

easy to make! This works like white rice for nearly any dish and it’s easy!! There is about two carbs a serving.

12 oz bag frozen cauliflower thawed/steamed in microwave. Drain.

Put into food processor with shredder attachment.

Shred into rice.

Place in 1 tbsp evoo in a sauce pan. Add salt and pepper to taste, dried parsley.

For this I also added a splash of chicken  stock.

Allow to cook liquid out. Serve.
