Low-Carb Cheeseburger “Mac”

I had a craving. I grew up, and in my early college days, lived on about three basic meals: Ramen noodles, cheeseburger macaroni (that boxed stuff) and beefaroni (not from a can either). LOL. That was a half box of elbow macaroni, pound of hamburger and a can of tomato sauce. Add parmesan if I could afford it and that was dinner. Wow at the carbs! LOL. So, I had a craving for not the really “boxed” version of cheeseburger macaroni, but a homemade version. This is what my daughter and I came up with. It is AMAZING. The total carb count for the entire dish is 30 Net. We got 5 servings out of this for our family, so that’s 6 Net carbs per serving! WOW. My daughter did the cheese combination, she’s so good with flavors! 🙂 Check it out.

Low Carb Cheeseburger Mac

INGREDIENTS:

2 lbs 93+% LEAN ground beef

1 1/2 cups (dry when measured) Carba-Nada egg noodles (purchase from http://www.netrition.com or http://www.amazon.com)

1 Packet Velveeta cheese sauce (you can buy this at any grocery)

1/4 cup Sargento 4 State Cheddar cheese

2 TBSP Parmesan cheese

Salt

Pepper

Season Salt (optional)

2 TBSP dried parsley

DIRECTIONS:

Brown ground beef seasoned with salt, pepper, season salt, etc. (however you like it). I did grind in some Rachael Ray 24/7 seasoning blend as well. DRAIN WELL WHEN COOKED.

Boil water and cook noodles per package directions. Drain well.

Mix meat and noodles.

Add cheese sauce and blend well.

Add Parmesan, cheddar and allow to melt through.

Season to taste if needed.

Add parsley, serve.

Net Carbs per serving (5 servings): 6
