Low Carb Crepes w/ Strawberries and Cream Cheese

Now tell me, how can you resist strawberries and cream cheese? I can’t! When I figured out the crepe recipe with Carbquik (purchase on http://www.amazon.com or http://www.netrition.com) I had to make this. I just had to! YUM!!! And, at 7.5 net carbs, well that’s breakfast!

Carbquik Crepes with strawberries and cream cheese

Ingredients:

1 egg

2 tbsp unsalted butter, melted

Extra butter (about a tablespoon to cook crepes)

2 1/2 tbsp So Delicious Vanilla Unsweet Coconut Milk

2 squirts liquid Splenda (or two packets powdered)

dash cinnamon

1 tbsp vanilla

4 tbsp Carbquik

1 tbsp Isopure Creamy Vanilla Zero Carb protein powder

2 medium strawberries, sliced thin

2 tbsp whipped cream cheese

1/4 cup (or less) Sugar Free pancake syrup (I used Hungry Jack)

Directions:

First mix egg, melted butter, milk, sweetener, cinnamon, vanilla, Carbquik and protein powder in blender or processor (I use Ninja) until batter forms.

Heat a 10-inch skillet and melt a teaspoon of butter.

Pour in just enough batter to coat your pan and allow to cook on one side until done, flip, cook on other side.

**while this is cooking, slice your strawberries

Remove crepe and repeat process.

Take each crepe and spread 1 tbsp cream cheese in the middle. Line sliced strawberries. Fold over to make a “burrito” look. 🙂

Place both on plate and top with sf syrup. This would be WONDERFUL with some sugar free whipped cream (Land O Lakes has some great zero carb that is wonderful) also.

So, I decided to get inventive for the filling. 🙂 Instead of the plain sliced strawberries, I diced two of them and a few blackberries, added a bit of splenda and made a “compote”. That, I put in the filing with the cream cheese of the crepe…top with SF syrup and SF whipped cream…OMG! Delish! I think that takes the carbs up to about 9 net, depending on how much fruit you use. Here is the pic…isn’t that yummy….it sure was!! 🙂
