So, my beloved daughter wanted pancakes this morning but she wanted them thin, so I got crepes kinda. 🙂 I used a 10-inch pan for these, now if you you use 8 inch you will get smaller ones, but the overall carbs, etc is the same no matter what, and it’s one serving. I have TWO variations here, one with 2% milk as my child does not like coconut milk, and the other with unsweet vanilla coconut milk. The results should be the same, just with added flavor with the coconut milk option. 🙂 Now, don’t this look yummy?
2 tbsp unsalted butter, melted
2 1/2 tbsp 2% milk OR So Delicious Unsweet Vanilla Coconut Milk
2 squirts (or packets) sweetener of choice
1 tbsp vanilla
Mix all ingredients in the blender or processor.
Heat skillet and throw in a pat of butter.
Cook till done. 🙂
