So, I finally tried the Carba-Nada pasta noodles. They are lower in carb than regular noodles. 1 1/2 cup is 18 net carbs, well that will make a meal, right? Yes. It did. And, the best part about it, it tastes like pasta!! No kidding. You can buy this on Amazon or Netrition. My advice, go with Netrition as the package I got on Amazon was mostly air! But, even so, it was SO good. I made chicken alfredo with it and for once it tasted like it should (normally zoodles go in there!) but I did miss the zoodle crunch I’d gotten used to! haha! Anyway, here is my pic and my recipe. I do hope you enjoy and will try these noodles for yourself. Here is a link on Netrition:
Ok, now for the recipe and end results:
3 lbs boneless chicken tenderloins
1/2 cup water (or more as needed to cook chicken. May also use stock if you have it)
Salt, Pepper to taste
1/2 tsp savory
1/2 tsp dried basil
1/8 tsp dried oregano
1 tbsp dried parsley (for the cooking chicken and for topping the dish, but if you have fresh go with it!)
1 1/2 cups Carba-Nada pasta (DRY)
1 Jar Ragu Alfredo Sauce
2 TBSP grated Parmesan
Place water and all seasonings, saving some parsley, into a pressure cooker and add chicken. Cook for 30 minutes (45 if frozen). You may also cook this on the stove until it is done. 🙂
When the chicken is done, boil two cups of water (maybe more if you need it), salted and add pasta.
Shred chicken and put into a pot.
When noodles are cooked to your liking (al-dente) drain and add to the chicken.
Add sauce, heat through.
Add grated Parm and allow that to melt through.
Top with parsley and enjoy. 🙂
