Cheesy Cheddar Chicken and Veggies

So, last night I cheated a bit on dinner. I took help from the store where I could get it and this was the result. Everyone was happy I must say. I had a small serving (about half an actual serving) and steamed broccoli on the side. But, this is tasty! πŸ™‚

INGREDIENTS:

2 pounds grilled chicken breast, cut into strips (Now, if you are in a rush, buy the Tyson Grilled and Ready strips, they are fine for this. If you have time, when you cook chicken, just cook up some extra breasts and freeze them! You can also use boiled or buy a rotisserie at the store…totally versiltile here!)

1 can peas and carrots, drained

1 jar of Prego Cheese Sauce (cheddar)

Olive oil

salt and pepper

DIRECTIONS:

Heat chicken if it is frozen in a little olive oil. Season if needed.

When the chicken is heated through, add in the can of peas and carrots (make sure you drain!)

Allow this to heat a second or two, and add the cheese sauce.

Mix and this will thicken as you cook it, so the longer it heats the thicker it gets and the richer, darker the cheese sauce.

The flavor is astounding. πŸ™‚ It really depends on the chicken you put in, trust me. I think a rotisserie chicken shredded would taste fantastic, and hey it’s FAST when you’ve got everything precooked and ready to go. πŸ™‚

I did not calculate the calories (sorry) but carbs per serving (serves 6) is about 7 net carbs. Not bad. πŸ™‚
