Minute (or so) White Chocolate Low-Carb Muffin

This was amazing!!!! 🙂

White Chocolate Minute (or so) Muffin (by Icie)

1 egg
1 squirt liquid sweetener
1 tsp unsalted butter, melted
2-3 tsp Torani Sugar Free White Chocolate Syrup (I used three)
dash cinnamon
1/2 tsp baking powder
1 TBSP coconut flour
1 tsp cream cheese
sf milk chocolate (I got a bar at World Market yesterday, 1 carb for a small square, check online or use SF Hershey’s choc chips).

Mix egg, liquid sweetener, unsalted butter and Torani syrup in a blender (I use Ninja) until WELL mixed (or it will be eggy).

Add in the cinnamon, baking powder and coconut flour. Mix well for a few seconds, maybe 10. Be careful not to overmix as you will get a paste. Haha.

Pour into a microwave safe bowl or mug and zap 1:15
Remove and top with cream cheese and the chocolate.
Microwave another 15-20 seconds.
Mix the chocolate and cream cheese and spread like frosting. smile emoticon Enjoy!!

I sometimes add protein powder in this too and it gives the extra vanilla flavor to it, that will give more protein if you need that.
