Minute and a Half Chocolate Muffin (1 NET CARB!!!)

Well this muffin is delish! It’s a tad dry, so I need to tweak the liquid component here I think but man is it good! And, 1 NET CARB! Yes, ONE!!  Check out the recipe! 🙂

Ingredients:

1 large egg

1 squirt liquid sweetener

1 tsp unsalted butter, melted

1 tbsp Torani Sugar Free French Vanilla syrup (or vanilla extract)

1 tbsp Bob’s Red Mill organic coconut flour

1 tsp unsweet cocoa powder

1/2 tsp baking powder

1/2 tsp Isopure Creamy Vanilla protein powder (buy from Amazon)

1 tbsp cream cheese

sprinkle cinnamon

Directions:

In a Ninja or blender, mix wet ingredients (egg, butter, liquid sweetener, vanilla syrup) until it is WELL MIXED.

Add dry (coconut flour, cocoa, baking powder, protein powder)

Mix well for about 20-25 seconds so it’s fully combined. DO NOT OVER MIX if you do it will be too thick and you will need to thin out the batter.

Place in to a microwave safe bowl or mug and microwave 1:15

Remove and top with cream cheese

Microwave 15 seconds

Spread cream cheese and sprinkle with cinnamon.
