Low Carb Chocolate Chip Minute Muffin

This is my favorite minute muffin ever! It is so easy, chocolatey and delish! 🙂 Simple to make, does not contain nut flour (uses coconut flour) and is super easy…you microwave it!

Ingredients:

1 egg

1 tsp melted unsalted butter

1 tbsp Torani French Vanilla Sugar Free Syrup (you can use vanilla extract if you like)

1 good squirt liquid Splenda

1 tbsp coconut flour

1/2 tsp baking powder

1/2 tsp cinnamon (plus more for topping)

5 Hershey’s sugar free chocolate chips

1/2 tsp Hershey’s sugar free chocolate syrup

1 tsp cream cheese

DIRECTIONS:

Mix egg, Torani, melted butter and Splenda WELL in a blender or food processor I recommend the Ninja.

Add in dry ingredients (coconut flour, baking powder, cinnamon) and the 5 chocolate chips.

Mix well about 20 seconds or so.

Pour into a microwave safe bowl or mug and microwave 1:15

Remove and top with cream cheese (just dollop it on there) and add the chocolate syrup.

Microwave 15 more seconds

Remove and spread the cream cheese and chocolate like frosting over the top. Sprinkle with more cinnamon if you want  and ENJOY!!
