This recipe is amazing. Low carbers can’t have pasta, but we can have zoodles. Zoodles are just zucchini squash julienned into strips like noodles! Very low in carbs. And it tastes amazing! In this recipe I used a jar Alfredo sauce, zoodles, chicken, peas and carrots. There is under 10 net carbs for a serving! That’s a meal!
2-3 lbs boneless skinless chicken breasts
Chicken stock or water for boiling
2 medium zucchini, julienned
1 small can peas and carrots, drained
1 jar Alfredo sauce
Salt and pepper to taste
Boil chicken in broth with salt and pepper. Add herbs if u like.
Julienne zucchini and place in a colander, salt lightly and allow to drain.
When chicken is done, shred and put into a large pot on the stove.
Add zoodles, peas and carrots, and Alfredo sauce. Salt and pepper to taste.
Cook until heated through and serve.
