This recipe my daughter thought up and we decided to give it a go. 🙂 The carb count is about 2 NET per stick, give or take. Our first try looks horrendous, haha, as they burst in the oven on us but my-oh-my were they ever tasty!!
1 cup almond flour
1/2 cup Parmesan cheese
6 String Cheese sticks (mozza is fine) cut in half to make 12
In one bowl beat eggs
In another mix all the dry ingredients. Season to your liking.
Dredge cheese sticks in egg, dry mix, back to egg, back to dry to get a good coating.
On a parchment paper lined baking sheet place the sticks and place into the freezer 30-40 minutes.
Bake in a 350-375 degree oven for 6 minutes and flip over, bake until done but WATCH CLOSELY to prevent bursting, which you see happened to us!! 🙂 Even if they go “boom” it is OK. THEY TASTE FABULOUS!!!!!
